Our Extra Virgin Olive Oil Claria is produced in the Tavoliere delle Puglie, a plain in northern Apulia (South of Italy) and it is obtained from the monocultivar Coratina. Olives are handpicked in the olive groves of Tenuta Ruocco in November and brought to the mill daily, so that they can be cold pressed short after the harvest. For this reason we obtain an excellent product with a low acidity, express as oleic acid, of 0,18%. Claria is bright green in color, with a full-bodies taste, bitter and spicy with an aftertaste of artichoke and it also well balanced with intense fruity aroma, aromatic notes of leaves and grass and the typical spicy perception which you can detect by your throat, synonym of genuineness and authenticity of the oil. It is very good to be served with legumes, soups and vegetables and also with meat and fish.
